Cheers to a Healthy Cinco de Mayo!

If you don't drink alcohol or if you are undergoing chemotherapy treatment or taking meds, that is not a reason to not have a festive drink for the holiday or any celebration!  I remember during my breast cancer journey and chemo treatment not been able to eat deserts or sip on a glass of wine.  Without a doubt, I was not about miss the fun.  There is always option B, Right? Instead of deserts I had fruit and also learned to make yummy non-alcoholic drinks.  And one of my favorites is the virgin frozen margarita.  See recipe below.

Have a healthy Cinco de Mayo fiesta with these recipes for homemade guacamole, tacos and non -alcoholic margaritas that will let you indulge in the holiday without derailing your diet. Not only do these recipes taste amazing, they don’t have any of the hidden sugars, sodium, and preservatives that are often found in prepared versions from the grocery store.

Virgin Frozen Margaritas

These Virgin Frozen Margaritas come together in just minutes, and both kids and adults would love them! They are a bit tart from the lime and a bit bitter from the grapefruit juice but combined with the sugar-rimmed glass, it all just come together perfectly.  While it may not compare to an actual margarita, I know you will be happy sipping one of these alongside tacos, guacamole, chips and salsa!

A little bit tart, a little bit sour, and a little bit sweet, these Virgin Frozen Margaritas come together in just minutes and are super family friendly

INGREDIENTS

  • Lime wedge

  • Coarse sugar

  • 1 (6-oz) can frozen limeade concentrate

  • 3/4 cup orange juice

  • 2/3 cup unsweetened grapefruit juice

  • 4 cups ice cubes

INSTRUCTIONS

  1. Place the sugar on a shallow plate. Rub the edge of 4 glasses with the lime wedge, then dip the rims in the coarse sugar.

  2. Combine the frozen limeade concentrate, orange juice, grapefruit juice and ice cubes in a blender and blend until slushy.

  3. Pour into the glasses to serve.

  4. Enjoy - Buen Provecho!

 

Chicken Tacos

Zesty, easy, and quick way to make chicken tacos that are delicious and diet-friendly.

INGREDIENTS

  • 1 pound thinly sliced chicken breasts, cut into thin strips or small squares

  • 3 limes, juiced, divided

  • 2 teaspoons ground cumin, divided

  • 2 teaspoons garlic powder, divided

  • 2 teaspoons ground chipotle pepper, divided

  • 1 white onion, thinly sliced

  • 2 jalapeno peppers - stemmed, seeded, and thinly sliced

  • 4 multi-grain tortillas, or gluten-free corn tortillas

  • 1 bunch cilantro, chopped

  • * Variations of meat: fish, pork, shrimp, or red meat

DIRECTIONS

  1. Combine chicken, juice of 1 lime, 1 teaspoon cumin, 1 teaspoon garlic powder, and 1 teaspoon chipotle pepper in a bowl; allow to marinate for 10 minutes.

  2. Saute chicken until is no longer pink in the center, 5 to 10 minutes.

  3. Layer tortillas between paper towels on a microwave-safe plate; heat in microwave until warmed, 10 to 20 seconds.

  4. Spoon chicken onto tortillas; top with cilantro, onions and lime juice.

  5. Add your favorite salsa

  6. Enjoy - Buen Provecho!

 

Guacamole

INGREDIENTS

  • 3 large avocados

  • 1 tomato

  • 1/2 onion (thinly diced)

  • 3 cloves of garlic

  • 1 bundle of cilantro

  • 1/2 lemon

  • salt (to taste)

DIRECTIONS

  1. Dice tomatoes, onions, cilantro, and minced garlic. Set aside.

  2. In a large bowl, cut and scoop out the avocados.

  3. Mash avocados well.

  4. Mix in tomatoes, onions, cilantro, and garlic.

  5. Add 1/4 teaspoon of salt. More to taste.

  6. Add the juice of 1/2 lemon. (This preserves it and will help it stay fresh)

  7. Transfer to a serving bowl, garnish with tomatoes and cilantro.

  8. Enjoy - Buen Provecho!
